Matcha can be prepared in two styles: usucha (thin tea) and koicha (thick tea), each revealing a different side of its character.

Ato Mukashi is especially recommended for koicha.

Elegant and refined, it offers both delicacy and complexity. The palate is full-bodied, deep, and richly layered.

Recommended preparation

Best enjoyed as koicha (thick matcha).

How to prepare koicha

  1. Place 4 chashaku scoops (4 g) of matcha in a tea bowl.
  2. Add 40 ml of water at 80°C (176°F), a little at a time in several additions.
  3. Using a chasen (bamboo whisk), knead until smooth. If it is too thick, add a small amount of hot water.

Preparation notes

  • Add the matcha and hot water, then whisk (or knead) thoroughly with a chasen.
  • Matcha can form clumps. Before adding hot water, sift the powder or gently loosen any clumps with a dry chasen.

Flavor characteristics

Elegant and delicate, yet complex at the same time. Its full, deep character is designed to reward slow, contemplative preparation.
